Broccoli is the King of vegetables, in terms of vitamins and minerals, but cabbage and potatoes also contain numerous vital nutrients. All three may even lower the risks for certain diseases. Cabbage may reduce inflammation, while starchy potatoes aid digestion and help with weight loss.
Yes, that’s right! For anyone who still thinks potatoes make people gain weight, this is a myth-busting moment! Here is the truth about potatoes: it is the animal products, like butter, milk, sour cream, and cheese, added to the potatoes which lead to obesity. When you eat potatoes plain, or just with salt and pepper, you develop a taste for them, and then there’s no going back to high fat animal products on your potatoes! These days I say that I don’t want anything (except salt) to come between me and my potatoes! (Note: we do not always eat them plain; we also prepare potatoes in a variety of dishes with yummy spices and sauces.)
In our house, every day we eat at least one of the following: red potatoes, yukon gold potatoes, russet potatoes, sweet potatoes, and yams… and we do not gain weight.
Broccoli, cabbage, and potatoes are the trifecta of vegetables! Besides the holy coconut, I believe these are the highest vibration foods on the planet.
Before I shifted to the vegan diet (9-9-09), I wondered if I would feel spaced out and lightheaded without the density of animal foods, but my experience has been that beans (and grains and vegetables) are the most grounding and stabilizing foods on Earth.
